现代纳豆生产采用纯纳豆菌种(枯草芽孢杆菌Bacillus subtilis)发酵。在纳豆发酵中,噬菌体污染是影响生产的主要因素之一,往往给纳豆生产企业造成重大经济损失。
中国食品发酵工业研究院纳豆技术与分析中心根据噬菌体特性对纳豆生产中污染的噬菌体进行检测分析研究。目前,已在分子生物学PCR快速检测分析方法、平板噬菌斑检测分析方法、噬菌体电子显微镜检测分析方法等方面取得初步成果。
污染噬菌体的快速检测分析有助于更好的预防和控制纳豆生产中噬菌体污染,为纳豆稳定生产及产品质量提供保障。
